Prepare Sushi Rice

Rinse the Rice
In a fine mesh strainer, rinse 1 cup of sushi rice under cold water until the water runs clear. This removes excess starch.

Cook the Rice
In a medium saucepan, combine the rinsed rice and 1.5 cups of water. Bring to a boil, then reduce the heat to low, cover, and simmer for 20 minutes or until water is absorbed. Remove from heat and let it sit, covered, for 10 minutes.

Season the Rice
In a small bowl, mix 2 tablespoons of rice vinegar, 1 teaspoon of sugar, and 1 teaspoon of salt. Gently fold this mixture into the cooked rice, being careful not to mash the grains.

Prepare the Tuna
Dice 8 oz of fresh sushi-grade tuna into small cubes and place in a bowl.

Add Flavorings
To the diced tuna, add 1 tablespoon of mayonnaise, 1 tablespoon of soy sauce, and wasabi to taste. Mix gently to combine.

Assemble the Sushi Rolls

Prepare the Rolling Mat
Place a bamboo sushi rolling mat on a clean surface. Lay a nori sheet, shiny side down, on the mat.

Spread the Rice
With wet hands, take a handful of sushi rice and evenly spread it over the nori sheet, leaving about 1 inch at the top edge free of rice.

Roll the Sushi
Using the bamboo mat, carefully roll the sushi away from you, pressing gently to keep the roll tight. Seal the edge of the nori with a little water.

Slice and Serve
Using a sharp knife, slice the roll into 6-8 pieces. Sprinkle with sesame seeds and serve with pickled ginger on the side.
