Method

Crust Preparation

  1. 1

    Make the Pie Crust

In a large bowl, mix the flour, sugar, and salt together.

  2. 2

    Cut in the Butter

Add the cold, cubed butter to the flour mixture, and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.

  3. 3

    Add Ice Water

Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Do not overmix.

  4. 4

    Chill the Dough

Shape the dough into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.

  5. 5

    Roll Out the Dough

After chilling, roll the dough out on a floured surface to fit your pie pan. Press it gently into the pan and trim any excess.

  6. 6

    Pre-bake the Crust

Preheat the oven to 350°F (175°C). Prick the bottom of the crust with a fork and bake for 15-20 minutes or until lightly golden. Let cool.

Filling Preparation

  1. 7

    Prepare the Cream Cheese Layer

In a mixing bowl, beat the cream cheese until smooth. Gradually add powdered sugar and vanilla extract, mixing until well combined.

  2. 8

    Whip the Heavy Cream

In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.

  3. 9

    Layer the Filling

Spread half of the cream cheese filling into the cooled pie crust, then drizzle half of the chocolate ganache over it. Repeat the layers with the remaining filling and ganache.

  4. 10

    Add Caramel Sauce

Drizzle the caramel sauce over the top of the pie.

  5. 11

    Top with Whipped Cream

Spread the whipped cream over the entire pie and sprinkle chocolate shavings on top.

  6. 12

    Chill the Pie

Refrigerate the pie for at least 4 hours or overnight to set before serving.
