Preparation

Prepare the Brussels Sprouts
Trim the ends of the Brussels sprouts and remove any yellow or damaged leaves. Cut the larger sprouts in half for even cooking.

Cook the Pancetta
In a large skillet over medium heat, add the pancetta bacon. Cook until crispy, about 5-7 minutes. Once cooked, remove from the skillet and set aside, leaving the rendered fat in the pan.

Toast the Almonds
In the same skillet, add the sliced almonds. Toast them over medium-low heat, stirring frequently until golden brown, about 3-5 minutes. Remove from heat and set aside.
Make the Glaze

Combine Glaze Ingredients
In a small bowl, whisk together maple syrup, miso paste, soy sauce, rice vinegar, minced garlic, and black pepper until smooth.
Cooking

Sauté Brussels Sprouts
In the same skillet with the pancetta fat, add the prepared Brussels sprouts. Sauté over medium-high heat until they are browned and tender, about 8-10 minutes.

Add Glaze and Pancetta
Once the Brussels sprouts are cooked, pour the miso maple glaze over them. Add the crispy pancetta and stir to combine. Cook for an additional 2-3 minutes until everything is heated through.

Finish with Almonds
Remove from heat and sprinkle the toasted almonds on top. Toss gently to combine before serving.
