Grilled Salmon

Prepare the Marinade
In a small bowl, whisk together olive oil, lemon juice, minced garlic, salt, pepper, and chopped dill.

Marinate the Salmon
Place the salmon fillets in a shallow dish or resealable plastic bag. Pour the marinade over the fillets, ensuring they are evenly coated. Let them marinate in the refrigerator for at least 20 minutes.

Grill the Salmon
Preheat a grill or grill pan to medium-high heat. Lightly oil the grates. Remove the salmon from the marinade and place skin-side down on the grill. Cook for about 4-5 minutes per side, or until the salmon is cooked through and has nice grill marks.

Rinse the Rice
Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.

Cook the Rice
In a medium saucepan, bring water and salt to a boil. Add the rinsed rice and stir once. Reduce heat to low, cover, and simmer for 15 minutes or until the water is fully absorbed.

Wash and trim the asparagus, slice the zucchini, and slice the red bell pepper. Place the vegetables in a large bowl.
