Cook the Eggs
In the same skillet, remove excess bacon fat, leaving about a teaspoon for flavor. Melt 1 tablespoon of butter over medium heat. Pour in the whisked eggs and gently stir with a spatula. As the eggs begin to set, fold them over to create a fluffy texture. Add the crumbled bacon and cheddar cheese just before the eggs are fully cooked, allowing the cheese to melt.

Toast the Brioche Buns
In another skillet, melt the remaining tablespoon of butter over medium heat and toast the brioche buns cut side down until golden brown.

Assemble the Sandwich
Place the folded eggs on the bottom half of the toasted brioche bun. Top with the other half of the bun.

Prepare the Potatoes
Wash and dice the potatoes into small cubes, leaving the skins on. This will add texture and flavor.

Cook the Home Fries
Heat olive oil in a large skillet over medium-high heat. Add the diced potatoes and season with paprika, onion powder, garlic powder, salt, and black pepper. Cook for about 15-20 minutes, stirring occasionally, until the potatoes are golden brown and crispy on the outside and tender on the inside.

Serve
Remove the home fries from heat and serve alongside the folded eggs on the brioche bun.
