Method

Meat

  1. 1

In a large skillet over medium heat, cook the pancetta bacon until crispy, about 5–6 minutes. Remove and set aside, leaving rendered fat in the pan.

  2. 2

Add the jalapeño pork sausage to the same skillet. Cook, breaking it up with a wooden spoon, until browned and cooked through, about 6–8 minutes. Drain excess fat if needed and combine with pancetta. Set aside.

Roasted Vegetables

  1. 3

    Preheat oven to 425°F (220°C).

  2. 4

In a mixing bowl, toss diced red bell pepper, zucchini, and red onion with olive oil, salt, and pepper.

  3. 5

Spread vegetables on a baking sheet in a single layer and roast for 20 minutes, stirring halfway through, until slightly charred and tender.

Pickled Onions

  1. 6

In a small saucepan, heat vinegar, sugar, salt, and water over medium heat until sugar and salt dissolve, about 2 minutes.

  2. 7

Place sliced red onions in a jar or bowl and pour the hot liquid over them. Let sit for at least 20 minutes while preparing the rest of the dish.

Home Fries

  1. 8

Boil diced potatoes in salted water for 5 minutes until slightly tender. Drain and let cool slightly.

  2. 9

In a large skillet over medium-high heat, add olive oil. Add the parboiled potatoes, salt, and paprika. Cook until golden and crispy, about 10 minutes, stirring occasionally.

Poached Eggs

  1. 10

Bring a large pot of water to a gentle simmer and add vinegar.

  2. 11

Crack each egg into a small ramekin. Swirl the water and gently slide the egg into the center. Poach each egg for 3–4 minutes until whites are set but yolks remain runny.

  3. 12

Remove with a slotted spoon and drain on paper towel.

Hollandaise Sauce

  1. 13

In a heatproof bowl over a pot of gently simmering water (double boiler), whisk egg yolks and lemon juice until thickened and doubled in volume.

  2. 14

Slowly drizzle in melted butter while whisking continuously until sauce is thick and creamy.

  3. 15

Season with salt and a pinch of cayenne pepper if using. Keep warm until ready to serve.

Assembly

  1. 16

On each plate, layer home fries as the base. Top with a mixture of roasted vegetables, pancetta, and sausage.

  2. 17

Place two poached eggs on top and drizzle generously with hollandaise sauce.

  3. 18

Garnish with pickled onions and serve immediately.
