Mashed Potato Filling

    Boil and mash potatoes

    Place the peeled and cubed potatoes in a large pot, cover with water, and bring to a boil. Cook for 15–20 minutes or until fork-tender. Drain well and return to the pot.

    Mash and season

    Add butter, milk, salt, and black pepper to the potatoes. Mash until smooth and creamy.

    Add flavorings

    Stir in crumbled bacon, chopped green onions, and shredded cheddar cheese. Mix until everything is evenly combined. Let cool to room temperature.

Spring Rolls

    Prepare wrappers

    Lay out spring roll wrappers on a clean, dry surface. Keep a small bowl of water nearby to seal the edges.

    Fill and roll

    Place about 2 tablespoons of the mashed potato filling onto the lower third of each wrapper. Fold the bottom over the filling, fold in the sides, and roll tightly. Seal the edge with a dab of water.

    Fry spring rolls

    Heat vegetable oil in a deep pan to 350°F (175°C). Fry spring rolls in small batches for 3–4 minutes or until golden brown and crispy. Drain on paper towels.

Sour Cream Dip

    Mix dip ingredients

    In a small bowl, combine sour cream, lemon juice, garlic powder, salt, and chopped chives. Stir until well blended. Chill until ready to serve.
