Method

Chicken Preparation

  1. 1

    Prepare the Chicken

Start by tenderizing the chicken breasts to an even thickness using a meat mallet or rolling pin. This helps them cook evenly.

  2. 2

    Set Up Breading Station

In three separate shallow dishes, set up your breading station. Place the flour mixed with salt, black pepper, garlic powder, and paprika in the first dish. In the second dish, beat the eggs. In the third dish, place the panko breadcrumbs.

  3. 3

    Bread the Chicken

Coat each chicken breast in the flour mixture, shaking off excess. Dip into the beaten eggs, then coat with panko breadcrumbs, pressing gently to adhere.

  4. 4

    Fry the Chicken

In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the breaded chicken breasts. Fry for 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

Sandwich Assembly

  1. 5

    Toast the Buns

In a separate pan, melt butter over medium heat. Add the brioche buns, cut side down, and toast until golden brown.

  2. 6

    Assemble the Sandwich

On the bottom half of each toasted brioche bun, place a fried chicken breast. Top with a slice of cheddar cheese, followed by pickles, lettuce leaves, and drizzle with spicy Korean sauce. Cover with the top half of the bun.

  3. 7

    Serve

Cut the sandwiches in half if desired and serve immediately with extra pickles and spicy Korean sauce on the side.
