Marinate Chicken
In a small bowl, mix olive oil, garlic powder, paprika, salt, black pepper, and lemon juice. Coat the chicken breasts with the marinade and let sit for at least 15 minutes (up to overnight in the refrigerator for more flavor).

Cook Chicken
Heat a skillet or grill pan over medium-high heat. Add a little oil if needed. Cook the marinated chicken breasts for 5-6 minutes on each side, or until they are golden brown and cooked through (internal temperature should reach 165°F/74°C). Remove from heat and let rest for 5 minutes before slicing.

Cook Rice
Rinse the jasmine rice under cold water until the water runs clear. In a medium saucepan, bring water and salt to a boil. Add the rice, stir once, cover with a lid, and reduce heat to low. Simmer for 15 minutes, then remove from heat and let stand (covered) for an additional 5 minutes before fluffing with a fork.

Sauté Vegetables
Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 30 seconds until fragrant. Add the broccoli, carrots, and zucchini. Season with salt and black pepper. Cook, stirring occasionally, for 6-8 minutes until vegetables are tender-crisp and lightly golden.
