Brioche French Toast Bites

Prepare the bread
Cut the brioche bread slices into bite-sized cubes, approximately 1 to 1.5 inches in size. Set aside.

Make the custard
In a large mixing bowl, whisk together the eggs, whole milk, heavy cream, sugar, vanilla extract, cinnamon, and salt until thoroughly combined.

Soak the bread
Place the brioche cubes into the custard mixture and gently toss to coat. Let the bread soak for about 5–10 minutes to absorb the custard.

Cook the bites
Heat 1 tablespoon of butter in a large non-stick skillet or griddle over medium heat. Working in batches, add the soaked brioche cubes and cook for 2–3 minutes per side, turning to brown all sides evenly. Add more butter between batches as needed.

Keep warm
Transfer the cooked brioche bites to a plate lined with a paper towel and keep warm in a low oven while you prepare the remaining batches and caramel sauce.
House-Made Caramel Sauce

Melt the sugar
In a medium saucepan over medium heat, melt the sugar, stirring constantly with a heatproof spatula or wooden spoon. The sugar will form clumps and eventually melt into an amber-colored liquid.

Add cream and finish
Slowly pour in the heavy cream while stirring. Allow the mixture to boil for 1–2 minutes, then remove from heat. Stir in vanilla extract and salt. Let the caramel cool slightly before serving.

Place the warm brioche bites on a serving platter or individual plates. Drizzle generously with the warm caramel sauce and serve immediately.
