For the Blackened Shrimp

Prepare the Shrimp
In a bowl, toss the shrimp with olive oil and Cajun seasoning until evenly coated.

Cook the Shrimp
Heat a skillet over medium-high heat. Add the seasoned shrimp and cook for about 2-3 minutes on each side, until they are cooked through and have a blackened crust. Remove from heat and set aside.
For the Corn Salsa

Combine Ingredients
In a mixing bowl, combine the corn, diced red bell pepper, red onion, chopped cilantro, and lime juice. Season with salt to taste and mix well.
For the Spicy Aioli

Mix Aioli
In a small bowl, whisk together the mayonnaise, Sriracha sauce, lime juice, and minced garlic until smooth. Adjust spiciness according to your preference.
For the Pickled Onions

Pickle the Onions
In a saucepan, combine the apple cider vinegar, water, sugar, and salt. Bring to a simmer. Add the thinly sliced red onion and remove from heat. Let it sit for at least 30 minutes to pickle.
For Serving

Assemble Tacos
Warm the corn tortillas in a dry skillet or microwave. Fill each tortilla with blackened shrimp, corn salsa, pickled onions, and a drizzle of spicy aioli.

Serve the tacos with guacamole on the side and a sprinkle of Tajin seasoning over tortilla chips.
