Blackened Mahi Mahi

    Prepare the Spice Mix

    In a small bowl, mix together paprika, cayenne pepper, garlic powder, onion powder, salt, and black pepper.

    Season the Mahi Mahi

    Rub the spice mix generously over both sides of the mahi mahi fillets.

    Cook the Mahi Mahi

    Heat olive oil in a skillet over medium-high heat. Add the seasoned mahi mahi fillets and cook for 3-4 minutes on each side, until blackened and cooked through. Remove from heat and set aside.

Chorizo & Corn Hash

    Cook the Chorizo

    In a large skillet, heat olive oil over medium heat. Add the chorizo and cook until browned and cooked through, about 5-6 minutes.

    Add Vegetables and Corn

    Add the diced red bell pepper, red onion, and corn to the skillet. Season with salt and black pepper. Cook for an additional 5-7 minutes, stirring occasionally, until vegetables are tender.

Creamy Mashed Potatoes

    Boil the Potatoes

    Peel and cut the potatoes into chunks. Place in a large pot of salted water and bring to a boil. Cook until tender, about 15-20 minutes.

    Drain the potatoes and return them to the pot. Add butter, heavy cream, salt, and black pepper. Mash until smooth and creamy.

Salsacado

    Mix Ingredients

    In a bowl, combine diced avocado, tomato, red onion, lime juice, and cilantro. Season with salt to taste. Mix gently to combine.
