Method

Preparing Blackened Mahi Mahi

    Season the Fish

    Rub the mahi mahi fillets with blackening seasoning on all sides.

    Heat the Pan

    In a large skillet, heat olive oil over medium-high heat until shimmering.

    Cook the Fish

    Place the seasoned mahi mahi fillets in the hot skillet and cook for about 4-5 minutes on each side, or until the fish is cooked through and has a blackened crust. Remove from heat and set aside.

Making Chorizo & Corn Hash

    Cook the Chorizo

    In the same skillet used for the fish, add chorizo and cook until browned and cooked through, about 5-7 minutes.

    Add Vegetables

    Add diced bell pepper and red onion to the skillet and cook until softened, about 3-4 minutes.

    Add Corn and Season

    Stir in corn kernels, salt, and black pepper. Cook for an additional 2-3 minutes until heated through. Remove from heat.

Making Creamy Mashed Potatoes

    Boil Potatoes

    In a large pot, cover the peeled and quartered potatoes with water and bring to a boil. Cook until tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add butter, heavy cream, salt, and black pepper. Mash until creamy and smooth.

Preparing Salsacado

    Combine Ingredients

    In a bowl, mix together diced avocado, diced tomato, finely chopped red onion, lime juice, and chopped cilantro.

    Season

    Add salt to the avocado mixture to taste and gently stir to combine.

Plating the Dish

    On each plate, add a scoop of creamy mashed potatoes, a portion of chorizo and corn hash, and top with a blackened mahi mahi fillet. Finish with a spoonful of salsacado on top.
