Preparing the Ribs

Preheat the Oven
Preheat your oven to 300°F (150°C).

Prepare the Ribs
Remove the silver skin from the back of the ribs if not already done. Rinse under cold water and pat dry with paper towels.

Season the Ribs
In a small bowl, mix together salt, black pepper, garlic powder, onion powder, paprika, and brown sugar. Rub the seasoning mix all over the ribs, ensuring an even coating.

Wrap the Ribs
Place the ribs on a large piece of aluminum foil. Wrap them tightly in the foil, creating a sealed packet.

Bake the Ribs
Place the foil-wrapped ribs on a baking sheet and bake for 2.5 to 3 hours until tender.

Wash and cut the seasonal vegetables into bite-sized pieces.

In a large skillet, heat olive oil over medium heat. Add the vegetables, seasoning with salt and pepper to taste. Sauté for about 5-7 minutes until tender but still crisp.
