    Grill the sourdough

    Brush both sides of the sourdough bread slices with olive oil. Heat a grill pan or skillet over medium heat and grill the bread for 2–3 minutes on each side, until golden brown and crisp.

    Prepare the avocado mash

    Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Add lemon juice, salt, and black pepper. Mash with a fork until mostly smooth with a few chunks remaining.

Poached Eggs

    Poach the eggs

    In a medium saucepan, bring 4 cups of water to a gentle simmer. Add white vinegar. Crack each egg into a small bowl, then gently slide it into the simmering water. Poach eggs for 3–4 minutes until whites are set and yolks are still runny. Remove with a slotted spoon and drain on a paper towel.

    Assemble the toast

    Spread the avocado mash evenly over the grilled sourdough slices. Top each slice with a poached egg. Scatter halved cherry tomatoes and radish slices over and around the toast. Drizzle with sriracha and sprinkle with hemp seed dukkah. Garnish with microgreens or fresh herbs if using. Serve immediately.
