1. Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the chopped onions and garlic, and sauté until translucent, about 3-4 minutes. Add the finely chopped mushrooms and sauté for another 5-7 minutes until the mushrooms are tender and any released moisture has evaporated. Season with salt and pepper to taste.
2. Mix the Dip
In a large mixing bowl, combine the sautéed mushroom mixture with the cream cheese and sour cream. Mix until well incorporated and smooth. Stir in the chopped chives.
3. Chill and Serve
