Prepare the Quinoa

Rinse the Quinoa
Place 1 cup of quinoa in a fine-mesh strainer and rinse under cold water for about 1-2 minutes to remove any bitterness.

Cook the Quinoa
In a medium saucepan, combine the rinsed quinoa with 2 cups of water. Bring to a boil over medium-high heat, then reduce to low and cover. Let it simmer for about 15 minutes or until the quinoa is fluffy and all the water is absorbed. Remove from heat and let it sit covered for an additional 5 minutes.
Prepare the Toppings

Prepare the Edamame
If using frozen edamame, cook according to package instructions, usually by boiling for 3-5 minutes. Drain and set aside.

Slice the Avocado
Cut the avocado in half, remove the pit, and scoop the flesh out with a spoon. Slice it into thin pieces.
Make the Dressing

Combine Dressing Ingredients
In a small bowl, whisk together 2 tablespoons of sesame oil, 2 tablespoons of soy sauce, 1 tablespoon of rice vinegar, and 1 tablespoon of honey or maple syrup. Add sesame seeds and season with salt and pepper to taste.
Assemble the Zen Bowl

Combine Ingredients
In a large bowl, add the cooked quinoa, top with sliced avocado and edamame. Drizzle the sesame dressing over the top.

Toss and Serve
Gently toss the ingredients together to combine. Serve immediately and enjoy your Zen Bowl!
