Potstickers Preparation

Make the Dough
In a bowl, combine the all-purpose flour and water. Mix until a dough forms. Knead for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

Prepare the Filling
In a large mixing bowl, combine the shredded cabbage, shredded carrots, chopped green onions, crumbled tofu, soy sauce, sesame oil, grated ginger, and minced garlic. Mix well until all ingredients are evenly incorporated.

Roll Out the Dough
After resting, divide the dough into small balls (about 1 inch in diameter). Roll each ball out into a thin circle on a floured surface.

Fill the Potstickers
Place a tablespoon of the filling mixture in the center of each dough circle. Fold the dough over the filling to create a half-moon shape, pinching the edges to seal tightly.

Cook the Potstickers
Heat a non-stick skillet over medium heat and add a little oil. Place the potstickers in the skillet and cook for about 2-3 minutes until the bottoms are golden brown. Then, add 1/4 cup of water to the skillet and cover to steam for about 5-7 minutes until the water has evaporated.

Mix the Sauce
In a small bowl, combine the soy sauce, lime juice, chili flakes, and rice vinegar. Stir well and set aside.

Combine Ingredients
In a medium bowl, mix together the diced mango, finely chopped red onion, chopped cilantro, lime juice, and salt to taste. Toss gently to combine.
