Method

Prepare Sushi Rice

    Rinse the Rice

    In a fine mesh strainer, rinse 1 cup of sushi rice under cold water until the water runs clear. This removes excess starch.

    Cook the Rice

    In a medium saucepan, combine the rinsed sushi rice with 1.5 cups of water. Bring to a boil, then reduce the heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and the water is absorbed.

    Season the Rice

    In a small bowl, mix together 2 tablespoons of rice vinegar, 1 tablespoon of sugar, and 0.5 teaspoon of salt. Once the rice is cooked, transfer it to a bowl and gently fold in the vinegar mixture. Allow to cool to room temperature.

Prepare Tuna

    Slice Tuna

    Using a sharp knife, cut the 8 oz of sushi grade tuna into thin slices, about 1/4 inch thick.

    Season Tuna

    In a bowl, combine the sliced tuna with 2 tablespoons of soy sauce, 1 teaspoon of wasabi, and 1 teaspoon of sesame oil. Mix well and let marinate for about 10 minutes.

Assemble the Stack

    Create Layers

    On a serving plate, begin by placing a layer of seasoned sushi rice at the bottom. Use a ring mold for a neat shape if desired.

    Add Tuna

    Place a layer of the marinated tuna slices on top of the rice.

    Top with Prawn Crackers

    Add a layer of prawn crackers on top of the tuna, gently pressing them down to secure.

    Repeat Layers

    Repeat the layering process until all ingredients are used, finishing with a layer of prawn crackers on top.

Garnish and Serve

    Garnish

    Finely slice the scallions and sprinkle them over the top of the sushi stack along with 1 tablespoon of sesame seeds.

    Serve

    Serve immediately with additional soy sauce and wasabi on the side.
