Prepare the Base

Cook Sushi Rice
Rinse 1 cup of sushi rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice and 1.5 cups of water. Bring to a boil over medium heat, then reduce the heat to low and cover. Cook for about 20 minutes or until the rice is tender and water is absorbed. Remove from heat and let sit covered for 10 minutes. Fluff with a fork.

Prepare the Tuna
While the rice is cooking, dice 8 oz of fresh sushi-grade tuna into small cubes. In a medium bowl, combine the diced tuna, 2 tablespoons of soy sauce, and 1 tablespoon of sesame oil. Chop 2 stalks of green onions and add them to the mixture along with 1 tablespoon of sesame seeds. Toss gently to combine and set aside.

Slice Vegetables
Thinly slice 1 medium cucumber and 1 medium avocado. Thinly slice 4 small radishes. Set all the sliced vegetables aside. If using frozen edamame, steam or microwave 1 cup of shelled edamame according to package instructions until heated through. Prepare 1 cup of seaweed salad according to package instructions if not using store-bought.
