Fries Preparation

Cut the Potatoes
Wash and peel the Russet potatoes. Cut them into thin strips, about 1/4 inch wide.

Preheat the Oven
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

Dry the Potatoes
After soaking, drain and rinse the potatoes. Pat them dry with a kitchen towel to remove excess moisture.

Season the Potatoes
In a large bowl, toss the dried potato strips with olive oil, salt, and black pepper until evenly coated.

Bake the Fries
Spread the seasoned potatoes in a single layer on the prepared baking sheet. Bake for 25-30 minutes, turning halfway through, until golden brown and crispy.

Add Truffle Oil and Parmesan
Once the fries are done, remove them from the oven and immediately drizzle with truffle oil and sprinkle with grated Parmesan cheese and chopped parsley. Toss to combine.
Lemon Aioli Preparation

Combine Ingredients
In a medium bowl, add mayonnaise, minced garlic, lemon juice, lemon zest, salt, and black pepper.

Mix Well
Whisk together the ingredients until smooth and well combined. Adjust seasoning with additional salt or pepper if needed.

Chill the Aioli
Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
