Prepare Tofu and Vegetables

Press Tofu
Press the tofu to remove excess moisture by wrapping it in a clean kitchen towel and placing a heavy object on top for about 15 minutes.

Chop Vegetables
While the tofu is pressing, slice the red bell pepper and carrot into thin strips. Trim the ends of the snap peas.
Cook the Curry Base

In a large pot, combine the coconut milk and red curry paste over medium heat. Stir until the paste is fully dissolved.

Pour in the vegetable broth, soy sauce, brown sugar, and lime juice. Stir well and bring to a simmer.
Prepare the Tofu and Add Vegetables

Cut the pressed tofu into cubes and add it to the simmering curry base. Cook for about 5 minutes.
