Method

Cooking the Tenderloin

  1. 1

    Prepare the Filet

Remove the tenderloin filet from the refrigerator and allow it to sit at room temperature for about 30 minutes before cooking.

  2. 2

    Season the Filet

Rub olive oil over the filet, then season generously with salt, black pepper, and garlic powder on both sides.

  3. 3

    Preheat the Pan

Heat a cast-iron skillet or heavy frying pan over medium-high heat for about 5 minutes.

  4. 4

    Sear the Filet

Once the pan is hot, add the filet to the pan. Sear for 4-5 minutes on one side until a crust forms.

  5. 5

    Flip and Add Butter

Flip the filet over and add the butter and fresh rosemary to the pan. Cook for an additional 4-5 minutes for medium-rare, basting the filet with the melted butter.

  6. 6

    Check Doneness

Use a meat thermometer to check the internal temperature. Aim for 130°F (54°C) for medium-rare.

  7. 7

    Rest the Filet

Remove the filet from the pan and let it rest on a cutting board for 5 minutes before slicing.

Preparing Optional Sides

  1. 8

    Prepare Asparagus

While the filet is resting, toss the asparagus with olive oil, salt, and pepper. Grill or sauté for about 5-7 minutes until tender.

  2. 9

    Cook Baby Potatoes

Boil the baby potatoes in salted water until tender, about 10-15 minutes. Drain and serve alongside the filet.
