Preparing the Sushi Rice

Rinse the Rice
In a fine mesh strainer, rinse 1 cup of sushi rice under cold water until the water runs clear. This removes excess starch.

Cook the Rice
In a rice cooker or a pot, combine the rinsed rice with 1 1/4 cups of water. Cook according to rice cooker instructions or bring to a boil, then cover and simmer on low for 18-20 minutes. Remove from heat and let it sit covered for 10 minutes.

Season the Rice
In a small bowl, mix 2 tablespoons of rice vinegar with 1 teaspoon of sugar until dissolved. Stir this mixture into the cooked rice after fluffing it with a fork. Allow the rice to cool to room temperature.
Preparing the Vegetables
Assembling the Sushi Cones

Prepare Nori Sheets
Take one nori sheet and cut it in half. Place it shiny side down on a clean surface.

Add Sushi Rice
With wet hands, take a small handful of sushi rice and press it onto the nori sheet, leaving the top third of the sheet empty.

Roll the Cone
Carefully fold the nori sheet over the filling, then roll it into a cone shape, sealing the edge with a little water to hold it together.

Sprinkle Sesame Seeds
Sprinkle sesame seeds over the filling before sealing, if desired.

Repeat
Repeat the process for the remaining nori sheets and fillings until all cones are assembled.
Serving

Serve with Soy Sauce
Serve the sushi cones immediately with soy sauce on the side for dipping.
