Method

Preparing the Frites

    Cutting the Potatoes

    Wash and peel the russet potatoes. Cut them into thin strips, about 1/4 inch thick.

    Soaking the Potatoes

    Place the cut potatoes in a bowl of cold water and soak for at least 30 minutes. This helps remove excess starch.

    Drying the Potatoes

    Drain the soaked potatoes and pat them dry thoroughly with a kitchen towel.

    Heating the Oil

    In a large pot or deep fryer, heat the vegetable oil to 325°F (160°C).

    Frying the Frites (First Fry)

    Carefully add the dried potato strips in batches to the hot oil. Fry for about 4-5 minutes until soft but not browned. Remove and drain on paper towels.

    Increasing the Oil Temperature

    Increase the oil temperature to 375°F (190°C) for the second fry.

    Frying the Frites (Second Fry)

    Fry the potatoes again in batches for another 3-4 minutes until golden brown and crispy. Remove and drain on paper towels.

    Sprinkle the hot fries with salt immediately after frying.

Cooking the Steak

    Preparing the Steak

    Take the ribeye steaks out of the refrigerator and allow them to come to room temperature for about 30 minutes.

    Season both sides of the steaks generously with salt and black pepper.

    In a large skillet, heat the olive oil over medium-high heat until shimmering.

    Add the steaks to the hot skillet and cook for about 4-5 minutes on one side. Flip the steaks over.

    Add the garlic cloves and thyme to the skillet. Cook for an additional 4-5 minutes for medium-rare, flipping occasionally and basting with the oil.

    Remove the steaks from the skillet and let them rest on a cutting board for about 5 minutes before slicing.

    Slice the rested steak against the grain and serve it alongside the crispy frites.
