Prepare Sushi Rice

    Rinse the Rice

    Place the sushi rice in a fine-mesh strainer and rinse under cold water until the water runs clear.

    Cook the Rice

    In a rice cooker or pot, combine the rinsed rice and 2.5 cups of water. Cook according to the rice cooker's instructions or bring to a boil, then cover and simmer on low heat for 20 minutes.

    Season the Rice

    In a small bowl, combine rice vinegar, sugar, and salt. Microwave for 30 seconds to dissolve. Once the rice is done, transfer to a large bowl and gently fold in the vinegar mixture. Allow the rice to cool to room temperature.

Prepare Spicy Tuna Filling

    Dice the Tuna

    Cut the fresh tuna into small cubes.

    Mix Filling

    In a bowl, combine the diced tuna, mayonnaise, sriracha sauce, and chopped scallions. Mix well and set aside.

Assemble the Rolls

    Prepare the Nori

    Lay a sheet of nori on a bamboo sushi mat, shiny side down.

    Add Rice

    Wet your hands and take about 1 cup of sushi rice. Spread the rice evenly over the nori, leaving a 1-inch border at the top.

    Add Filling

    Place a line of the spicy tuna filling and a few julienned cucumber pieces across the center of the rice.

    Roll It Up

    Using the bamboo mat, carefully lift the edge of the mat and roll it over the filling tightly. Continue rolling until the entire roll is formed.

    Seal the Roll

    Moisten the top edge of the nori with a little water to seal the roll. Use a sharp knife to slice the roll into 6-8 pieces.

    Serve

    Sprinkle sesame seeds on top if desired, and serve with soy sauce on the side.
