Spicy Tuna Dynamite Roll Recipe

Prepare Sushi Rice

    Rinse and Cook Rice

    Rinse sushi rice under cold water until water runs clear. In a rice cooker, add rinsed rice and water. Cook according to rice cooker instructions or bring to a boil, then cover and simmer for 18-20 minutes until water is absorbed.

    Season Rice

    In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Allow to cool to room temperature.

Prepare Spicy Tuna Mixture

    Mix Tuna

    In a medium bowl, combine diced ahi tuna, sriracha, mayonnaise, chopped green onions, and sesame oil. Mix gently until well combined. Set aside.

Fry Prawns

    Prepare Breading Station

    Set up a breading station with three bowls: one with flour mixed with salt and pepper, one with beaten egg, and the third with panko breadcrumbs.

    Bread and Fry Prawns

    Dip each prawn in flour, then in beaten egg, and finally coat with panko breadcrumbs. In a frying pan, heat oil over medium heat. Fry the prawns until golden brown and cooked through, about 2-3 minutes per side. Drain on paper towels.

Assemble Rolls

    Roll Sushi

    Place a nori sheet on a bamboo sushi mat, shiny side down. Wet your hands and spread a thin layer of sushi rice over the nori, leaving a 1-inch border at the top. Add a line of spicy tuna mixture, a slice of avocado, and cucumber. Roll tightly away from you, using the mat to help. Seal the edge with a bit of water.

    Cut and Serve

    Using a sharp knife, slice the roll into 6-8 pieces. Repeat with remaining ingredients. Serve with soy sauce and wasabi on the side.
