Method
Marinate Chicken
- 1
Prepare Marinade
In a large bowl, combine buttermilk, hot sauce, salt, black pepper, garlic powder, and onion powder. Mix well until fully combined.
- 2
Marinate Chicken
Add the chicken thighs to the marinade and ensure they are fully submerged. Cover and refrigerate for at least 4 hours, preferably overnight.
Prepare Coating
- 3
Mix Dry Ingredients
In a separate bowl, whisk together all-purpose flour, cornstarch, paprika, cayenne pepper, salt, black pepper, garlic powder, and onion powder until well combined.
Fry Chicken
- 4
Heat Oil
In a large heavy-bottomed pot or deep fryer, heat vegetable oil to 350°F (175°C).
- 5
Coat Chicken
Remove chicken from the marinade, allowing excess to drip off. Dredge each piece in the flour mixture, pressing gently to adhere the coating.
- 6
Fry Chicken
Carefully place the coated chicken in the hot oil, cooking in batches if necessary. Fry for about 10-12 minutes, or until golden brown and the internal temperature reaches 165°F (74°C).
- 7
Drain Chicken
Remove the fried chicken and place on a wire rack or plate lined with paper towels to drain excess oil.
Assemble Sandwich
- 8
Prepare Buns
While the chicken is draining, lightly toast the burger buns in a skillet or toaster.
- 9
Spread Mayonnaise
Spread a generous amount of mayonnaise on the bottom half of each toasted bun.
- 10
Add Chicken and Toppings
Place a piece of fried chicken on top of the mayo spread. Add pickles and leafy greens to taste. Top with the other half of the bun.
