Short Rib Preparation

    Season the Ribs

    Rub the beef short ribs with salt and black pepper evenly on all sides.

    Sear the Ribs

    In a large Dutch oven, heat olive oil over medium-high heat. Once hot, add the short ribs and sear until browned on all sides, about 3-4 minutes per side. Remove ribs and set aside.

    Sauté Aromatics

    In the same pot, add the diced onion and cook until translucent, about 5 minutes. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.

    Combine Ingredients

    Return the short ribs to the pot. Pour in the beef broth and Worcestershire sauce. Add the bay leaves and dried thyme.

    Simmer

    Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 2.5 to 3 hours, or until the meat is tender and falling off the bone.

    Shred the Beef

    Once cooked, remove the ribs from the pot and let cool slightly. Shred the meat using two forks, discarding any excess fat and bones. Return the shredded beef to the broth.

    Prepare the Rolls

    Preheat your oven to 350°F (175°C). Cut the crusty bread rolls in half lengthwise and place them on a baking sheet.

    Layer the shredded short rib meat generously on the bottom half of each roll. Top with 2 slices of Swiss cheese for each roll.

    Melt the Cheese

    Place the baking sheet in the preheated oven and bake for 10-15 minutes, or until the cheese is melted and bubbly.

    Garnish and Serve

    Remove from the oven, sprinkle with chopped parsley, and place the top half of the rolls back on. Serve hot with a small bowl of the broth for dipping.
