Method
Grains
- 1
Prepare the Grains
Rinse quinoa and farro under cold water. In a medium saucepan, combine water, quinoa, and farro. Bring to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes until grains are tender and water is absorbed. Remove from heat and let sit for 5 minutes before fluffing with a fork.
Salmon
- 2
Cook the Salmon
Preheat the grill or a skillet over medium-high heat. Brush salmon fillets with olive oil and season with salt and black pepper. Place the salmon skin-side down on the grill or skillet. Cook for 4-5 minutes on each side, or until the salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
Lemon Herb Sauce
- 3
Make the Sauce
In a small bowl, combine chopped parsley, dill, minced garlic, lemon juice, lemon zest, and honey. Mix well until all ingredients are thoroughly combined. Adjust seasoning with salt and pepper to taste.
Vegetables
- 4
Sauté the Vegetables
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add asparagus, carrots, and bell pepper. Sauté for about 5-7 minutes or until the vegetables are tender but still crisp. Season with salt and pepper to taste.
