Prepare the Crust
Preheat your oven to 350°F (175°C). In a medium bowl, mix together the graham cracker crumbs, granulated sugar, and melted unsalted butter until well combined.

Form the Crust
Press the mixture firmly into the bottom of a 6-inch springform pan to form an even layer. Bake for 8-10 minutes until lightly golden. Remove from oven and set aside to cool.

Prepare the Filling
In a large bowl, beat the cream cheese with an electric mixer until smooth and creamy. Add the granulated sugar, sour cream, and vanilla extract, mixing until fully combined.

Add the egg to the mixture and beat until just combined. Avoid over-mixing to prevent excess air in the cheesecake.

Bake the Cheesecake
Pour the cheesecake filling into the cooled crust and smooth the top. Bake for 25-30 minutes, or until the center is set but still slightly jiggly. Turn off the oven and let the cheesecake cool inside for 1 hour.

Remove the cheesecake from the oven and refrigerate for at least 4 hours, or overnight for best results.
Salted Caramel Sauce Preparation

Make Caramel Sauce
In a medium saucepan over medium heat, melt the granulated sugar, stirring constantly until it becomes a golden amber color. This should take about 5-7 minutes.

Add Butter and Cream
Once the sugar is melted, carefully add the unsalted butter and heavy cream, stirring until fully combined. Be cautious as the mixture will bubble vigorously.

Stir in the sea salt and allow the sauce to cool slightly before drizzling it over the chilled cheesecake.
