Method

For the Roasted Tomatoes

  1. 1

    Prepare and Roast the Tomatoes

Preheat the oven to 400°F (200°C). In a mixing bowl, combine the cherry tomatoes, olive oil, salt, black pepper, and balsamic vinegar. Toss until the tomatoes are well coated.

  2. 2

    Roast the Tomatoes

Spread the coated tomatoes on a baking sheet in a single layer. Roast in the preheated oven for about 20-25 minutes, or until they are soft and slightly caramelized. Remove from the oven and toss in fresh basil.

For the Whipped Feta Cheese

  1. 3

    Blend the Ingredients

In a food processor, add the feta cheese, cream cheese, olive oil, minced garlic, fresh chives, and lemon juice. Blend until smooth and creamy.

  2. 4

    Taste and Adjust

Taste the whipped feta and adjust seasoning if necessary. You can add a pinch of salt or more lemon juice to enhance the flavor.

For the Garlic Crostini

  1. 5

    Prepare the Baguette

Slice the baguette into ½-inch thick slices. Preheat a skillet or grill over medium heat.

  2. 6

    Toast the Crostini

Brush the baguette slices with olive oil on both sides. Toast them in the skillet for about 2-3 minutes per side, until golden brown.

  3. 7

    Add Garlic Flavor

Once toasted, rub the garlic clove over the warm crostini for a burst of garlic flavor.
