For the Roasted Tomatoes

Prepare and Roast the Tomatoes
Preheat the oven to 400°F (200°C). In a mixing bowl, combine the cherry tomatoes, olive oil, salt, black pepper, and balsamic vinegar. Toss until the tomatoes are well coated.

Roast the Tomatoes
Spread the coated tomatoes on a baking sheet in a single layer. Roast in the preheated oven for about 20-25 minutes, or until they are soft and slightly caramelized. Remove from the oven and toss in fresh basil.
For the Whipped Feta Cheese

Blend the Ingredients
In a food processor, add the feta cheese, cream cheese, olive oil, minced garlic, fresh chives, and lemon juice. Blend until smooth and creamy.

Taste and Adjust
Taste the whipped feta and adjust seasoning if necessary. You can add a pinch of salt or more lemon juice to enhance the flavor.
