Method

Preparation

  1. 1

    Prepare the Ingredients

Slice the onion, bell pepper, carrot, and zucchini. Mince the garlic and ginger. Cube the chicken or tofu if using.

Cooking the Curry

  1. 2

    Sauté Aromatics

In a large skillet or wok, heat vegetable oil over medium heat. Add minced garlic, ginger, and sliced onion, and sauté for about 2-3 minutes until fragrant and the onion becomes translucent.

  2. 3

    Add Curry Paste

Stir in the red curry paste and cook for another minute, mixing well with the aromatics.

  3. 4

    Incorporate Coconut Milk

Pour in the coconut milk, stirring to combine with the curry paste. Bring to a gentle simmer.

  4. 5

    Add Protein and Vegetables

If using chicken, add the cubed chicken breast and let it cook for about 5-7 minutes until fully cooked. If using tofu, add it with the vegetables. Add the sliced bell pepper, carrot, zucchini, and snow peas, stirring to coat in the curry sauce.

  5. 6

    Simmer

Let the curry simmer on low heat for about 10-15 minutes, stirring occasionally until the vegetables are tender and the flavors meld together.

Serving

  1. 7

    Garnish and Serve

Remove the curry from heat. Serve hot, garnished with fresh basil leaves and lime wedges on the side.
