Prepare the Fries

Cut the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips to make fries.

Soak the Fries
Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Remove fries from water, pat them dry, and fry them in batches for about 5-7 minutes until golden brown. Remove and drain on paper towels.

Sprinkle salt over the hot fries while they are still warm.
Make the Gravy

In a saucepan over medium heat, melt the unsalted butter.

Once the butter is melted, whisk in the all-purpose flour and cook for about 1-2 minutes until it turns a light golden color.

Gradually whisk in the beef broth, ensuring there are no lumps. Bring to a simmer.

Add salt and black pepper to taste. Simmer for about 5-10 minutes until the gravy thickens.

On a serving plate, place a generous portion of hot fries.

Pour the hot beef gravy over the fries, making sure to cover them evenly.

Scatter cheese curds over the hot gravy so that they begin to melt slightly.
