Dumpling Preparation

Make the Filling
In a mixing bowl, combine ground pork, finely chopped green onions, minced garlic, grated ginger, soy sauce, sesame oil, salt, and black pepper. Mix well until all ingredients are evenly distributed.

Form the Dumplings
Take a dumpling wrapper and place a teaspoon of the pork filling in the center. Wet the edges of the wrapper with water, fold it in half, and pinch to seal. Repeat until all filling is used.

Cook the Dumplings
Bring a large pot of water to a boil. Carefully drop the dumplings into the boiling water and cook for about 5-7 minutes, or until they float to the surface and are cooked through. Remove and drain.

Mix the Sauce
In a small bowl, combine the ponzu sauce, red chili flakes, and lime juice. Stir well to combine and let it sit for a few minutes to allow the flavors to meld.

Prepare the Salsa
In a medium bowl, combine diced mango, finely chopped red onion, minced jalapeño, chopped cilantro, lime juice, and salt. Mix gently and adjust the seasoning to taste.
