Add the finely chopped shallots to the melted butter and sauté until they are translucent, about 2-3 minutes.

Pour in the beef or chicken stock and bring the mixture to a simmer. Reduce the heat to low and let it simmer for about 5 minutes to allow the flavors to combine.

Stir in the heavy cream and continue to simmer for an additional 5 minutes, stirring occasionally, until the sauce begins to thicken.
