Prepare the crust
Preheat your oven to 350°F (175°C). In a medium bowl, mix together the graham cracker crumbs, granulated sugar, and melted butter until well combined.

Press the crust into the pan
Press the crumb mixture firmly into the bottom of a 9-inch springform pan. Make sure it's evenly spread and compacted. Bake in the preheated oven for 8-10 minutes until lightly golden. Remove from oven and allow to cool.

Prepare the filling
In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy.

Add sugar and sour cream
Add the granulated sugar and sour cream to the cream cheese. Mix until well combined and smooth.

Incorporate eggs and vanilla
Add the vanilla extract and eggs, one at a time, mixing on low speed after each addition until just combined. Be careful not to overmix.

Bake the cheesecake
Pour the cheesecake filling over the cooled crust. Bake in the oven at 325°F (160°C) for 55-60 minutes or until the center is set and only slightly jiggly. Turn off the oven and crack the door, allowing the cheesecake to cool in the oven for 1 hour.

Chill the cheesecake
Remove the cheesecake from the oven and refrigerate for at least 4 hours, preferably overnight, to fully set.

Prepare the topping
Just before serving, toss the fresh strawberries, blueberries, and raspberries together in a bowl. Sprinkle with powdered sugar and gently mix to coat.

Serve the cheesecake
Remove the cheesecake from the springform pan and place it on a serving platter. Top with the berry mixture just before serving.
