Method

Crispy Shiitake Preparation

    Rehydrate Shiitake Mushrooms

    Place dried shiitake mushrooms in a bowl of warm water and let soak for about 30 minutes until they are soft. Drain and slice them thinly.

    Prepare the Coating

    In a bowl, combine the sliced shiitake mushrooms, soy sauce, olive oil, and cornstarch. Mix well until the mushrooms are fully coated.

    Cook the Mushrooms

    Heat a non-stick skillet over medium heat. Add the coated shiitake mushrooms and cook for about 5-7 minutes, stirring occasionally, until they are crispy and golden brown.

Vegetable Sauté

    Sauté Vegetables

    In the same skillet, add sesame oil and heat over medium-high. Add minced garlic and grated ginger, and sauté for about 30 seconds until fragrant.

    Add Remaining Vegetables

    Add sliced bell pepper, zucchini, and julienned carrot. Stir-fry for about 5-7 minutes until the vegetables are tender but still crisp.

    Add Wild Mushrooms

    Add the mixed wild mushrooms to the skillet and cook for another 3-5 minutes until they are tender and cooked through.

Cashew Topping

    Prepare Cashews

    In a dry skillet, toast the raw cashews over medium heat for about 5 minutes, stirring frequently until they are golden brown. Season with salt and pepper to taste.

Assembly

    Assemble the Bowl

    In a bowl, layer the sautéed vegetables and wild mushrooms, then top with crispy shiitake mushrooms and toasted cashews. Serve warm.
