Method

Pudding Preparation

  1. 1

    Prepare Dates

Place the chopped dates in a bowl and pour the boiling water over them. Let them soak for about 10 minutes until softened.

  2. 2

    Cream Butter and Sugar

In a mixing bowl, cream together the softened unsalted butter and brown sugar until light and fluffy.

  3. 3

    Add Egg and Vanilla

Beat in the egg and vanilla extract to the butter-sugar mixture until well combined.

  4. 4

    Incorporate Dry Ingredients

Sift in the self-raising flour, baking powder, and salt. Mix until just combined.

  5. 5

    Add Dates

Stir in the soaked dates along with any remaining liquid from the bowl until evenly distributed.

  6. 6

    Prepare Baking Dish

Preheat the oven to 180°C (350°F). Grease two small ramekins or a single larger one for baking.

  7. 7

    Fill Ramekins

Divide the pudding mixture evenly between the prepared ramekins.

  8. 8

    Bake

Bake in the preheated oven for 15-20 minutes or until a toothpick inserted into the center comes out clean.

Toffee Sauce Preparation

  1. 9

    Melt Ingredients

In a small saucepan over medium heat, combine the brown sugar and unsalted butter. Stir until melted and combined.

  2. 10

    Add Cream and Vanilla

Slowly pour in the heavy cream while stirring continuously. Add the vanilla extract and bring the mixture to a gentle simmer.

  3. 11

    Simmer

Allow the sauce to simmer for about 5 minutes until it thickens slightly. Remove from heat.

Serving

  1. 12

    Serve Pudding

Once the pudding is baked, remove from the oven and let it cool for a couple of minutes. Invert onto a plate.

  2. 13

    Drizzle Sauce

Generously pour the warm toffee sauce over the pudding. Serve immediately, optionally with vanilla ice cream or whipped cream.
