For the Grilled Chicken

    Prepare the Marinade

    In a bowl, mix the olive oil, garlic powder, paprika, salt, black pepper, lemon juice, and fresh thyme to create a marinade.

    Marinate the Chicken

    Add the boneless chicken breasts to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

    Preheat the Grill

    Preheat your grill or grill pan over medium-high heat.

    Grill the Chicken

    Remove the chicken from the marinade and place it on the grill. Cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from grill and let rest for 5 minutes before slicing.

    Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.

    In a pot, combine rinsed jasmine rice, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the rice is tender and the water is absorbed. Remove from heat and let it sit covered for 5 minutes.

    Cut the zucchini, bell pepper, and carrot into bite-sized pieces.

    In a large skillet, heat the olive oil over medium heat. Add the chopped vegetables and season with salt and black pepper. Sauté for about 5-7 minutes, or until the vegetables are tender but still crisp.
