Wash and Cut Potatoes
Thoroughly wash the russet potatoes under cold running water to remove dirt. Cut each potato into long strips, about 1/4 inch thick, to make fries.

Soak Potatoes
Place the cut potato strips in a large bowl filled with cold water. Let them soak for at least 30 minutes to remove excess starch; this helps in achieving crispier fries.

Heat the Oil
In a deep frying pot or a heavy skillet, pour in the vegetable oil and heat it over medium-high heat until it reaches 350°F (175°C). You can use a thermometer to check the temperature or drop a small piece of potato in to see if it sizzles.

Dry the Potatoes
After soaking, drain the potatoes and pat them dry with paper towels to remove excess moisture, which can cause the oil to splatter.

Fry the Potatoes
Carefully add a handful of dried potato strips to the hot oil. Do not overcrowd the pot. Fry them for about 5-7 minutes until they are golden brown and crispy. Use a slotted spoon to remove the fries and drain them on paper towels.

While the fries are still hot, sprinkle them with salt, black pepper, garlic powder, and paprika, tossing gently to coat evenly.
