Preparing the Roast Beef

Season the Beef
Rub the beef chuck roast with salt, black pepper, garlic powder, and onion powder thoroughly on all sides.

Sear the Beef
In a large skillet, heat the olive oil over medium-high heat. Once hot, sear the beef roast for about 3-4 minutes on each side until nicely browned.

Cook the Beef
Transfer the seared beef to a slow cooker. Pour in the beef broth and Worcestershire sauce. Cover and cook on low for 8-10 hours, or until the beef is very tender.

Shred the Beef
Once cooked, remove the beef from the slow cooker, and let it rest for a few minutes. Shred the beef using two forks.

Strain the Broth
Strain the broth from the slow cooker and reserve it for dipping.
Assembling the Sandwiches

Prepare the Rolls
Cut the French rolls in half horizontally. Optionally, toast the insides of the rolls until golden.

Add the Beef
Layer shredded beef generously onto the bottom half of each roll.

Add Cheese
Place two slices of provolone cheese on top of the shredded beef.

Melt the Cheese
Place the assembled sandwiches under a broiler for 2-3 minutes, or until the cheese is melted and bubbly.

Garnish and Serve
Sprinkle fresh parsley over the melted cheese and top with the other half of the roll. Serve immediately with the reserved broth for dipping.
