Prepare the Potatoes
Peel and dice the potatoes into small cubes. Boil them in salted water until cooked through, about 10-15 minutes. Drain and set aside.

Roast the Vegetables
Dice the red bell pepper, zucchini, and red onion into small pieces. Toss them with olive oil, salt, and pepper. Roast in a preheated oven at 200°C (400°F) for 20-25 minutes until tender and slightly caramelized.

Cook the Meats
In a large skillet, cook the pancetta bacon over medium heat until crispy. Remove from the skillet and let drain on paper towels. In the same skillet, cook the jalapeño pork sausage until browned and cooked through, breaking it into pieces as it cooks.

Plate the Dish
Divide the hash mixture among plates. Top each serving with a poached egg and a generous drizzle of hollandaise sauce. Garnish with pickled onions.
