Crab Benedict

Preparation

    Prepare Home Fries

    In a skillet over medium heat, add a tablespoon of olive oil. Add the home fries and season with salt and pepper. Cook for about 10-15 minutes, stirring occasionally, until crispy and golden brown. Set aside.

    Sauté Spinach and Arugula

    In the same skillet, add the fresh spinach and arugula. Sauté for about 2-3 minutes until wilted. Season with salt and pepper to taste. Remove from heat and set aside.

    Toast English Muffins

    Split the English muffins in half and toast them until golden brown. Set aside.

Eggs and Assembly

    Poach the Eggs

    Bring a pot of water to a gentle simmer. Add a splash of vinegar to the water. Crack each egg into a small bowl and gently slide them into the simmering water. Poach for about 3-4 minutes for soft yolks, or longer if desired. Remove with a slotted spoon and drain on paper towels.

    Assemble the Benedict

    On each toasted English muffin half, layer some sautéed spinach and arugula, then add a generous portion of lump crab meat. Top each with a poached egg and drizzle with hollandaise sauce.

    Serve the Crab Benedict with a side of home fries and fresh fruit. Enjoy!
