Churros

    Prepare the Dough

    In a medium saucepan, combine water, granulated sugar, and salt. Bring to a boil over medium heat.

    Add Flour

    Once boiling, remove from heat and stir in the flour until the mixture forms a ball and separates from the sides of the pan.

    Incorporate Eggs

    Allow the dough to cool for a few minutes, then add eggs one at a time, mixing well after each addition until the dough is smooth.

    Heat Oil

    In a heavy pot, heat vegetable oil to 375°F (190°C) over medium-high heat.

    Pipe Churros

    Spoon the dough into a piping bag fitted with a star tip. Pipe 4-6 inch strips of dough into the hot oil and fry until golden brown, about 2-3 minutes on each side.

    Drain and Cool

    Remove churros with a slotted spoon and place them on paper towels to drain excess oil.

Cinnamon Sugar

    Mix Cinnamon Sugar

    In a small bowl, combine granulated sugar and ground cinnamon. Mix well.

    Coat Churros

    While the churros are still warm, roll them in the cinnamon sugar mixture to coat evenly.

Assembly

    Assemble Ice Cream Sandwich

    Take one churro and place a scoop of French vanilla ice cream on top. Top with another churro to create a sandwich.

    Serve immediately while the churros are warm and the ice cream is cold.
