Preparation

    Prepare Vegetables

    Finely chop the onion, carrot, celery, and garlic.

Cooking

    Heat Oil

    In a large pot or Dutch oven, heat the olive oil over medium heat.

    Sauté Vegetables

    Add the chopped onion, carrot, and celery to the pot. Sauté for about 5 minutes until softened.

    Add Garlic

    Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

    Brown the Meat

    Increase the heat to medium-high and add the ground beef and pork. Cook until browned, breaking it up with a spoon, about 7-10 minutes.

    Deglaze with Wine

    Pour in the red wine, scraping the bottom of the pot to release any brown bits. Let it simmer for 2-3 minutes until slightly reduced.

    Add Tomatoes and Broth

    Stir in the canned tomatoes, tomato paste, beef broth, and milk. Mix well.

    Season the Sauce

    Add bay leaves, oregano, basil, salt, and black pepper. Bring to a simmer.

    Simmer the Sauce

    Reduce the heat to low and let the sauce simmer uncovered for about 1 to 1.5 hours, stirring occasionally.

    Cook the Pasta

    While the sauce simmers, cook the pasta according to package instructions until al dente. Drain and set aside.

    Combine and Serve

    Once the sauce is ready, remove bay leaves, and combine with the cooked pasta. Serve with grated Parmesan cheese.
