Method

Preparing the Fish

    Season the Mahi Mahi

    In a small bowl, mix together paprika, cayenne pepper, garlic powder, onion powder, salt, and black pepper. Rub this spice mixture generously over both sides of the mahi mahi fillets.

    Cook the Mahi Mahi

    Heat olive oil in a large skillet over medium-high heat. Once hot, add the seasoned mahi mahi fillets. Cook for about 4-5 minutes on each side, or until the fish is cooked through and has a nice blackened crust. Remove from the skillet and set aside.

Making the Chorizo & Corn Hash

    Cook the Chorizo

    In the same skillet, add chorizo and cook over medium heat until browned and cooked through, about 5 minutes. Remove from the skillet and set aside.

    Sauté the Vegetables

    In the same skillet, add olive oil if needed and sauté the diced red bell pepper and yellow onion until softened, about 3-4 minutes.

    Combine with Corn and Chorizo

    Add corn kernels, cooked chorizo, chopped cilantro, salt, and black pepper to the skillet. Stir well and cook for an additional 2-3 minutes until everything is heated through and combined.

Preparing the Mashed Potatoes

    Boil the Potatoes

    In a large pot, add cubed potatoes and cover with water. Add a pinch of salt and bring to a boil. Cook until potatoes are fork-tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return to the pot. Add butter, heavy cream, salt, and black pepper. Mash until smooth and creamy.

Making the Salsacado

    Combine Ingredients

    In a medium bowl, combine diced avocados, tomatoes, red onion, lime juice, chopped cilantro, and salt. Gently stir to combine, being careful not to mash the avocados too much.

Plating the Dish

    Serve and Enjoy

    Place a generous scoop of the chorizo and corn hash on each plate, top with a blackened mahi mahi fillet, a serving of creamy mashed potatoes on the side, and finish with a spoonful of salsacado. Enjoy your delicious meal!
