Preparing the Ribs

Remove the Membrane
Start by removing the thin membrane on the back of the ribs. This helps the ribs become more tender and allows the rub to penetrate better. Use a sharp knife to lift one edge of the membrane and pull it off using a paper towel for better grip.

Apply the Dry Rub
In a bowl, mix together the brown sugar, paprika, salt, black pepper, garlic powder, onion powder, and cayenne pepper. Rub this mixture all over the ribs, covering both sides evenly. Wrap the ribs in plastic wrap and refrigerate for at least 2 hours, preferably overnight.

In a saucepan, combine the ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, smoked paprika, garlic powder, salt, and black pepper.

Cook the Sauce
Heat the saucepan over medium heat, stirring occasionally. Bring the mixture to a simmer and let it cook for about 15-20 minutes until it thickens slightly. Remove from heat and set aside.

Switch your oven to broil mode. Place the ribs back in the oven under the broiler for about 5-10 minutes, keeping a close eye to ensure they don't burn. The sauce should caramelize and become sticky.
