Preparing the Grains

1. Cook Quinoa

Rinse 1 cup of quinoa under cold water to remove its natural coating. In a medium saucepan, combine quinoa with 2 cups of water and a pinch of salt. Bring to a boil, then reduce to low heat, cover and simmer for 15 minutes until water is absorbed. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.

2. Cook Farro

In a separate pot, combine 1 cup of farro with 3 cups of water and a pinch of salt. Bring to a boil, reduce heat and simmer uncovered for about 30 minutes or until grains are tender. Drain any excess water and set aside.

3. Cook Barley

In another pot, add 1 cup of barley to 3 cups of water. Bring to a boil, then reduce heat and simmer for about 45 minutes or until chewy and tender. Drain excess water and set aside.

Preparing the Vegetables

4. Chop Vegetables

Dice the red bell pepper, zucchini, carrot, and red onion into small, even pieces. Mince the garlic cloves finely.

5. Sauté Vegetables

In a large skillet, heat 3 tablespoons of olive oil over medium heat. Add the chopped red onion and garlic, sautéing until the onion is translucent. Then, add the diced bell pepper, zucchini, and carrot. Cook for about 5-7 minutes until vegetables are tender.

Combining and Serving

6. Mix Everything Together

Once the grains are cooked and the vegetables are sautéed, combine the quinoa, farro, and barley in the skillet with the sautéed vegetables. Stir in chopped fresh parsley, lemon juice, salt, and black pepper. Adjust seasoning to taste.

7. Serve

Serve the ancient grains warm as a side dish or a light main course. Enjoy!
