Preheat and prep baking surface
Preheat the oven to 375°F (190°C). Line a large rimmed baking sheet with parchment paper or foil for easier cleanup. If using a large oven-safe platter, ensure it fits comfortably in the oven.
Arrange chips
Spread the 1 lb of tortilla chips in an even single (or slightly overlapping) layer on the prepared baking sheet or platter. Try to avoid creating very tall piles so cheese can melt evenly.
Optional crisping
If you prefer extra-crispy chips, lightly brush or mist the chips with 1 tablespoon melted butter or oil. Sprinkle a pinch of kosher salt evenly over the chips. This step is optional.
Layer cheeses
Mix the shredded cheddar (2 cups) and Monterey Jack (1 cup) in a bowl. Evenly sprinkle about half of the cheese mixture over the arranged chips, then add any protein/beans (see next section) in an even layer, then top with the remaining cheese so it melts and binds the toppings to the chips.
Add pickled jalapeños
Scatter 1/4 cup sliced pickled jalapeños over the cheese layer, adjusting amount to taste. Reserve a few slices for garnish if desired.
Bake until bubbly
Place the sheet or platter in the preheated oven. Bake for 6–9 minutes, or until the cheese is fully melted and bubbly and just beginning to brown in spots. Keep an eye on it to prevent burning.
Finish and garnish
Remove the nachos from the oven. Immediately scatter 1/2 cup diced tomatoes and 1/4 cup sliced green onions across the top so they warm slightly but retain freshness. Sprinkle chopped cilantro (2 tablespoons) if using, and add any reserved jalapeño slices.
Protein & Beans (optional)
If using cooked ground beef: heat a skillet over medium heat, add 8 oz cooked or raw seasoned ground beef. If using raw, crumble and cook 6–8 minutes until browned and cooked through, drain any excess fat. Season lightly with 1/4 tsp salt and 1/4 tsp black pepper or use taco seasoning to taste. If using shredded rotisserie chicken, toss with 1–2 tablespoons of salsa or a pinch of taco seasoning and warm for 2–3 minutes. Stir beans (1/2 cup) into the warmed protein or heat separately for 1–2 minutes.
Evenly distribute the warmed protein and/or beans over the chips between the two cheese layers as instructed above so they heat through while the cheese melts.
Sauces & Serving
Plate and dress: After removing the nachos from the oven and adding fresh garnishes, dollop or drizzle 1/2 cup sour cream and 1/2 cup salsa over the nachos. You can serve sour cream in spoonfuls across the nachos or thin it slightly with 1–2 teaspoons of milk to drizzle.
Season and serve: Taste a corner chip and adjust salt and pepper to taste. Squeeze lime wedges (3) over the nachos as desired. Serve immediately with extra salsa, sour cream, and hot sauce on the side.
Storage/Reheat: Leftover assembled nachos will lose crispness. Store leftover toppings (salsa, sour cream, cilantro) separately. Reheat leftover chips with cheese in a 350°F (175°C) oven for 4–6 minutes until cheese is melted; add fresh toppings after reheating.
